Hello! We're about to move mail from one 365 tenancy to another and we'd like to minimise downtime and NDRs. I was hoping to have mail delivered to pmg which would then hold it until we can release it, pointed at the new location. I'm sure I've done this before but I don't remember how - maybe...

We have messages from domain.com going to server.com, a few staff members want their mail hosted on Microsoft 365. I can't be the first guy with this situation - how have others configured PME & M365 to make this happen?
