figured out by my self:
After reinstalling it didn't go better - still boot errors indicating problems with pcie and nvme.
So, I analyzed my BIOS settings, after changing the pcie settings from auto to pci express 3.0, everything works as expected.
I had a running Proxmox server, booting via zfs raid (systemd).
After adding an nvme drive into a pcie slot, the system tries boot from that drive.
I see the proxmox bootscreen but when selecting Proxmox to start, then my server jumps to the nvme drive.
Can I change this without reinstalling the...
In fact, my next Proxmox- + storage cluster is going to be designed by professionals. I hope they choose the appropriate disks.
But I have to care about costs and most important, performance!

In fact, I was hoping that the MX500 is the bottleneck. This setup was just for testing. In my productive system I would use server SSD.

I think I'm using OpenSSL 1.1, so I should not have any problems but I have. Fortunately, my backups are running fine with the self signed certificate as long as I don't understand my issue.
I thought so already.
But in fact I'm happy that I was able to got the LetsEncrypt certs running at my home servers. But I don't know how to change the chain (I never thought I need to concern about that).
For my nextcloud server I also have a (different) LetsEncrypt cert and after 29.September...
So finally I got my backup working again - but without the LetsEncrypt Certificate.
I created a new Self Signed Certificate on the PBS and used the fingerprint for the PVE.
I also tested a renewed LetsEncrypt certificate from today - same issue.
So by now I'll stick to the self signed certs on...

it seams the DST Root CA X3 is the problem.
