Is there a way to estimate / extrapolate runtime of backup actions, or guess whether it finished or is still running?
My PBS runs on low end hardware (4TB@7.2k spinning SAS, non-RAID, with LVM cache on SSD, quadcore Atom D525...

Without logs or description of _how_ you log in: not really.
Do you log in over SSH or via the web interface? Local, as in, with a keyboard connected to the machine?
Via SSH: fail2ban can lock you out if some process on your machine tries (and fails) to connect to often
Via the webinterface...
You start the log with the error, are there any lines above?
Also, the three logs have different timestamps, does the container run in the same timezone as Proxmox?
You mention two identical machines; are they together in a cluster or separate installations?

What will you be using the server for? Keep in mind that Ceph is a cluster-FS, and likes to have three or more nodes. In addition to ZFS, LVM could be an option as well.
