Okay we figured this out. For us, it was simply changing the network device type from E1000E (which was set from a vmware migraiton) to VirtIO after installing the driver package, seems to have fixed the issue. Heres the last 30 minutes from our ping monitoring. (red mark is one packet dropped)...
