We currently run a PVE 3.4 on a Xeon E3 with 32GB of RAM and 4x 3TB WD RE4 sata drives with MDADM RAID 10 and LVM.
We have a small multi-tenanted operation and we all share this server for a variety of software. A little bit on everything, from Windows File and WSUS server...
Not really helping you with you problem, but you may want to try openmediavault.
It uses a lot of the freenas codebase, but on a debian 6 base. So its should virtualize a lot better given its compatibility with virtio disk and network adaptors
There is also some hardware controller limitation that might be at play here. if the server is older than 3 years, chances are the controller wont be able to boot, or address at boot, drives 3TB and Larger.

Hi All
I have having difficulty uploading a windows server 2012 ISO to my proxmox 2.2 boxes. Using the webGui, I get a "Parameter verification failed" message.
I then tried winSCP to upload the ISO to the local ISO folder
I also tried uploading it to my NAS's ISO folder.
The file is there...
I have done it a few times
as Mmenaz stated, migrate using IDE disks to start with.
Once in the OS:
1. install the virtio drivers
2. shut the machine down
3. disconnect the drives from the VM
4. reconnect, this time as Virtio disks
5. start VM
