No. If I remeber correctly you can not mix disk size in vdevs as it will not work. You can use different size vdevs but only with raidZ and mirror setups and you still lose the data recovery guaranty on disk failure.

It just takes a bit more effort.
You use sata first boot the windows and install update the virtuo drivers inthe windows. Than you change the disk to virtuo. And it should work.

Try searching the forum for uefi install. Therr is a thread describing a workaround for people having issues instaling with uefi bios.
It is a convoluted process though. Maybe gojng the Debian to Proxmox is a simpler way.
