I have used zfs, it still has many bug. It still uses a separate ARC cache on linux and so on. lvm can reduce/extend too. lvm has a lvmcache. lvm doesn't use a lot of ram.
It is so easy, but with downtime.
I have a mistake in my mind, so, correct size, step by step:
shutdown a CT.
edit /etc/pve/lxc/xxx.conf - with a new correct size.
Backup CT by gui
Delete CT
Restore CT from backup.
Profit!

You need a more RAM for ARC in this case. There is no other moment with it. 8k - is good size for zvol too.
And I don't use zfs on linux anymore, bacause it has some bugs (my VMs hangs in during heavy disk i/o). I use lvmcache now.
I can't to do it now, but in the future - may be. I think there is no need to test it. Because a maintainer of zfs tell about wrong of 8k zvol for ARC!!! Can I tune it?

Can I change a default block size of zvol when created a vm from web gui?

I don't have many slots in my server, so I have devied SSD: mdadm+LVM is just for OS only and other space on my SSD for ZiL+L2ARC. Do you know about best block size for zvol? And what about default blocksize zvol when I create a vm by proxmox gui?

Dear jdrews, please note, that ARC/L2ARC - are ADAPTIVE cache. So, I think you can't get the speed about SSD from your magnetic drives! For ZiL (in general) will be enought 3GB part. ZiL is use ONLY for event of power cut situation.
