PVE Migration/backup restore

Hello.
I have a 3 node PVE cluster that are all running PVE on mirrored SD cards. I just purchased several 500gb nvem drives that I and to migrate to. I got 2 for each node so I can run them in ZFS RAID1.
I have done a bit of customization on the existing installs, mostly adding support for ZFS over iSCSL to a truenas scale.
What would be the best way for me to migrate these installs over to the new nvme disks?

You have a cluster. You can remove/add nodes! The cleanest way I can think of is to evacuate one node, remove it cleanly from the cluster as documented(!), install fresh - with another node-name(!) and join the cluster. Then move some VMs here.

Repeat twice...

Disclaimer: you are outside of the common scenarios and a step sideways of my setups, so take my post with a grain of salt.
