Increasing size of mirrored ZFS Pool (512GB to 1TB)

I have two 512GB consumer SSDs configured in a mirrored ZFS config. I use these exclusively for CT/VM storage. I finally have two 1TB enterprise SSDs that I would like to use to replace the two 512s. What is the best way to go about this? I know if I was going to the same size drives I could just replace one at a time and resilver. Can I still do that? Once the 1TB drives are installed can I extend the partition to fill all of the space? Should I set them up as a new pool and move VMs?

yes.

You wont need to. just set autoexpand to on:
zpool set autoexpand=on poolname
