Did you check the memory usage inside the VM? That the memory graphs may not reflect the actual usage inside the VM is nothing new and not really a problem...

PCI(e) passthrough gives the whole device to a VM and you cannot use if from the Proxmox host. Either get another GPU or remove it from the VM. I'm not sure if you can hot unplug the GPU from VM and, if you can, the operating system inside the VM...

Update: I must have accidentally clicked the option to disable the user while changing the email. Re enabled the root user through the CLI and am now able to log in again.
