Hi,
I have 2 x 1 TB HDD on my proxmox server. On each of HDD i want to create a 800 GB logical volume and connect to VM.This VM i'll use for torrent seeding & file sharing in my lan.
What is more suitable VM: OpenVZ or KVM ?

Whichever method you choose, I imagine disk I/O will be a concern.
In the event you choose KVM over OpenVZ, you can still provide your VM with direct access to the disk(s), as described here.
