I accidentally installed sendmail on my proxmox install and now I receive a 500 internal server error on the web management site as shown below.

Code:
Internal Server Error The server encountered an internal error or misconfiguration and was unable to complete your request.
Please contact the server administrator, root and inform them of the time the error occurred, and anything you might have done that may have caused the error.
More information about this error may be available in the server error log.

Please help.

Any hint in /var/log/apache2/error.log ?

This is a snippet from the top of that file.

The last line shown in the snippet continues forever in the file until the time of posting this and will continue until I fix the issue. It is repeating itself every 5 seconds.

Please advise.

Any ideas on how to fix this one?

You obviously removed all pve packages - I strongly suggest to do a clean reinstall.

You can also try to fix it manually with:

# apt-get install proxmox-ve-2.6.18

(replace 2.6.18 with the kernel version you use).
