I would like to use a mini pc i5 8 generation (4 sata disks in raid) and 16 GB ram To replace my old Qnap. I would FIRST do automatic backups of my iphone photos. Manage photos with a media center and watch movies. Maybe using docker for the various services. Can I have some advice??

PVE does neither got any NAS functionalities nor does it directly support docker.
You could add that yourself by manually installing and setting up the services or run your NAS/Docker inside VMs.

But something like a TrueNAS Scale or Unraid might be a better choice. There you get a NAS that can directly run VMs as well as docker containers.
