+1 observium is very good

passthrough will work but only 1 vm will be able to use your graphic card configured in the pass throught setup. KVMGT is "virtual graphics card".

just go for SSD and limit ARC to 512MB or such (options zfs zfs_arc_max). We have some server with 48GB of ram and put only 1 or GB. SSD is the good way, have it on memory is really not need except if you have a lot of cache data read.
