I am brand new to Proxmox. I currently have an Unraid server running a docker.

I am planning to migrate over to Proxmox and Truenas.

The server has 12 x 4TB HDDs connected to 2 LSI HBA controllers. These will be passed through to Truenas.

It has a 250 GB NVMe drive that I plan on installing Proxmox on (I'm aware this is way bigger of a drive than Proxmox requires, but its what i have available)

I have 4 500GB NVMe drives sitting around that I could install in the server with something like this: https://www.amazon.com/gp/product/B07VRY6FPH/ref=ppx_yo_dt_b_asin_title_o01_s00?ie=UTF8&psc=1

These would be used for the VM's etc.

My question is, are there any issues with creating a ZFS pool with NVMe drives?

Enterprise grade SSDs are recommended if you want to use ZFS. Sometimes consumer SSDs will last years, sometime only months. Really depends on your workload.
There are no (except of one I know of) enterprise grade M.2 SSDs. Most of them just use PCIe or U.2 if using NVMe. M.2 offers just way to less space to place all the components a enterrpise SSDs need like big capacitators to work even if the PSU fails to allow caching of sync writes for lowering the write amplification. Or more durable NAND flash like SLC/MLC where you need more chips because they can't reach the capacity of TLC/QLC NAND chips. And you need more flash chips because of the way bigger overprovisioning.

I for example got two Samsung EVOs and such a M.2 to PCIe board but removed it because the SSDs wouldn't have survived a year after measuring my SSD writes of 270TB per year.
