Do I understand right, that if I have 2 CPUs I have to upload 2 keys? Or there should be some single special key for 2 CPU installations?

You should make that more obvious as I made a mistake when purchasing mine.
Ordered single cpu X number of sockets but some of our machines are dual socket.

Yes. But you will get only one license key.

Yes, no great news. I think the socket based model is used by many companies.

For VmWare it is actually worse since they charge you per socket but in case of multi-core processors they split license into 2-6 core processors and up to 12 core processors. See http://www.vmware.com/download/eula/multicore.html

Just contact our sales team I you ever get into such situation - I am sure they will find an acceptable solution.

If you have one CPU in your mainboard, you need the 1-CPU subscription. As soon as you have 2-CPU in your mainboard, you need the 2-CPU subscription. Its that simple and yes, the upgrade can be done anytime (you just pay the difference).
