Hello all,
I would like to know if it is possible to start the Proxmox interface live on the server instead of going through a web browser?

Hi,

there's two ways to do achieve management directly on the server:
  • install a desktop environment with a browser and open that, a bit of configuration could also make this like a kiosk mode
    A lighter desktop variant would be XFCE, installing task-xfce-desktop should do the trick for that, but there are also naturally GNOME, KDE, i3 and many more desktop environments that are working OK, depending on your server HW.
  • use the variety of existing CLI tools that are already provided by Proxmox VE, see the docs's manpage section for an overview of those: https://pve.proxmox.com/pve-docs/index.html#_command_line_interface

If I understand it would be necessary to install a desktop environment on one partition and proxmox on another?
 
No, a desktop environment would be part of the linux that is running Proxmox VE itself. Proxmox is based on Debian, so you can look what desktop environment you prefer and install it using apt.
