cluster.server-quorum-type=server
cluster.data-self-heal-algorithm=full
cluster.locking-scheme=granular
cluster.shd-max-threads=8
cluster.shd-wait-qlength=10000

client.event-threads=4
server.event-threads=4
performance.client-io-threads=on

Are those client settings?

Unfortunately, we don't have any official recommendations for Gluster server settings. Ceph enjoys some more attention. For example Bug reports and fixes for Ceph packages in our repository are covered by the Proxmox VE subscription agreement.

We could maybe add some user experiences or rather recommendations to the Wiki, but adding it to the official reference documentation is rather unlikely I think unless Gluster Server packages are shipped by us, too.
