Hello.

How to hide from the user a list of servers in the cluster?

So that the user sees only the VM from his resource pool.
 
My proxmox servers have a private IP and are in a specific VLAN. Only few IP are allowed to access this VLAN (only administrators desktops). Even if a user can find the server FDQN he cannot access it.

That's not possible. Even if you'd hide them in the gui, the API requests would still have the nodename in the API request path, as only the node where the VM is on, can do things like start/stop/backup/... But as long as they do not have the respective permissions on a node they cannot see any details from the node besides the name.
