Has anyone installed this? I'm having a heck of time installing this on the actual ubuntu server 20.04

I've not tried the Homelabs OS,
But as a newb myself, about 6 months in, I can advise that most of those app can easily be installed on a Ubuntu VM with SNAP, Docker and Portainer installed. There is a 1-click self hosted registry for Portainer which will get you going, with the added advantage that you'll learn a lot more that way.
