Right now I am using 4 SSD's ( 120GB) , but want to move to something more reliable / more storage. Right now I am running 20 Windows 7 x64 machines , 1 webserver and my firewall. The IO wait is around 0.2% idle and 3-5% is the highest I have seen yet. I am considering buying a RAID card or two but am curious if a SAN would be better for my situation. I need around 1TB of storage so was thinking 8x1TB RAID 10 would work quite well but am new to SAN so have no idea if that would be something I should look at before making any purchases .

The disks are the weakest link in the chain. So what really matters is what disks are behind any setup. If you'll move from SSD drives to SAS drives even if you use RAID10 your performance will decrease.
There are tools online that can help you calculate IOPS performance in various raid setups.
