I want to run a pure ipv6 network for vms and make sure that none of the vm on this proxmox host gets dhcp v4 IP and any ipv4 traffic at all / even including the host. Is there are an easy way to configure this at datacenter-level or inside the proxmox-host server, so that i do not have to go into each vm and disable ipv4 when they get a dhcp-offer.. I can not isolate the dhcp offer on the switch it seems. IPv6 works great, but then they get this ipv4 ip also.

You could probably disable ipv4 forwarding on that bridge. See sysctl net.ipv4.conf.vmbr0.forwarding for vmbr0.
