I've updated the server with last updates and I rebooted it and pvesr hangs agains, but now, it in less of 1 day.
New /var/log/kern.log file:

Today, after 22 days, another time the "pvesr" process hangs, you can see the /var/log/kern.log file:

reboot
it doesn't work, I need force it:

Why does Proxmox 7 was launched with Linux Kernel 5.11 (EOL May 2021) instead of 5.10 (LTS release)?
For servers, I think LTS (long-term support) is a better option. Proxmox 6.2, 6.3 & 6.4 includes kernels 5.4 LTS as default option.
If it's related to hardware support, then you can include LTS...
