I think i've solved my problem! It was the fact I'm used to change the configuration of the NIC parameters, in the advanced configurations. Now I reset the NIC and all seems to work like a charme with virtio.
Version: pve-manager/6.1-7/13e58d5e (running kernel: 5.3.18-1-pve)
The traffic is 50 MB/sec on a Win 2019 guest that backup on another Centos guest on another server.

Windows 2016 or 2019 network goes down when the network interface is overloaded. The proxmox network is up, so it's a Windows problem. Seems that some buffers is full, don't know...
