My recommendation would be to unmount the disk from your hypervisor (and remove it's entry from fstab to avoid accidental mounting) if it's not used on the HV itself. Otherwise you'll run into concurrent access issues...
Can you tell us the name of your hosting provider? Most of them have detailed documentation how routing is done which may help.
Additionally how do you assign IPs to your VMs currently (from your first subnet) and how do you want to assign them: Manually or via Proxmox internal SDN / IPset...

This is a really annoying 'problem' / QOL thing.
I assume your issue is that packets reach your HV but your HV does not know where to send the reply as your VPN is likely a separate network.
To cope with that you could add a custom route to correctly send the replies back to your VPN address:
