- a switch direct connect to PC(vlans) - Mikrotik L009UiGS-RM
On the PC I run:
- vm with ipfire(second firewall)
- vm with linux AD, for all my laptops of my family
- many VMs...

For a home lab, is ok your setup. Take in account that almost evry Mikrotik device is not a simple switch, is more like a mini server. The crs326 is ok for sure, and very capable/versatile. I am not sure if crs310 will be ok for your setup from performance...

You could create several zfs storage(datasets) with different blocksize: 4k, 16k, and so on on all nodes.
Then you create any VM with vDisks in the desired storage. So in sich case you solve the problems.

IMO, I am 100% agree with @LnxBil. Also to enable trim in any VM/PMX host is not so beter, because for any block who is deleted you will also send a TRIM command, so it will impact on performance(think that you delete a big file ...). It is much better to make a schedule(daily for example)...

- do not put all eggs in a single basket(I would buy 2 x servers for PBS), because if some bug(hardware) will hit your only PBS server you are out of game
- 12 x SSD, in raidz2, is suboptimal, as @fabian also suggested(iops is bad), but also the resilver(in case of a ssd...
Yes, it work only with zfs. Without zfs you can not have replication. Any other kind of tools, are not fast as pve-zsync(who is using incremental transfer from src to dst).
Using a shared storage, you can have only file transfer ... witch will take more time to finish.
