While I could not spin up new VMs last week, it works this week. I am not sure if an update came down to fix it but I did nothing. RAM usage is steady at 200GB of 512GB. I don't get it.

This was solved by hanging the Proxmox VMs off of Intel SR-IOV Virtual Function adapters instead of a direct bridge at the Ethernet level.

This was solved by switching to the Avago 9400 HBA in lieu of the LSI 3108 (which does not have an HBA mode). Apparently, ZFS does not like it if it cannot 'speak directly' with the disks.
