Ok the only way to rectify the issue where the 3 box will not see the backup nfs share was to reboot the whole cluster.
I have also updated and upgraded to the latest version from 2.1 to 2.2:

Hi Team,
I have a cluster of 3 proxmox 2.1. I have dual nics on all 3 boxes and all a 1GB and they been aggregated. The storage is an iscsi ds412+ again dual nic with agregation on.
The problem is if I reboot box 1 from the cluster, when in comes back on the vms do not boot back up...
