I must be going crazy, so after setting up new system and restoring all my VMs on it from PBS I noticed the following utilization disparity:
New system:
zfs list

Yeah after some thought about it I figured that the pve-cluster would be very confused with another fs bind mounted onto /etc/pve. I ended up using dm-crypt for my backup destination since encrypting /var/lib/pve-cluster would mean I will lose the ability to have encrypted and unencrypted VMs...
I know this thread is old, but for anyone on the Internet who was looking for this like me - you can do it with bind mount instead of a symlink. I have around 14TB of backups so recreating the PBS volume wasn't suitable, if you have an empty PBS volume definitely encrypt it before doing any...
Superb, thanks! Do you know how VM snapshots behave if I don't transfer them - my basic snapshot usage is do a snapshot, upgrade the VM, delete or restore the snapshot if the upgrade fails. Will that functionality still work?

Most hosts are pve-manager/7.3-4/d69b70d4 and PBS hosts are v2.3.2-1.

So we have our hosts with ZFS RAID10 arrays which do their scheduled ZFS scrub every month.
On top of those arrays we have FreeBSD VMs using ZFS again, however the scrubbing schedule there is disabled.
