You're using a UEFI BIOS, where is the EFI disk with the pre-enrolled keys?

Merely resizing the disk up at the host level should not break boot. Did you try doing any kind of resizing in-vm, like with Gparted, or using LVM commands?

#1 question: IS THE VM BACKED UP?

I would recommend downloading the following and try booting them in order in that VM:

https://sourceforge.net/projects/refind/

https://distrowatch.com/table.php?distribution=rescatux
