CPU setting on a single VM PVE

This Socket/Cores/CPUtype would probably one of the greatest hit of forum requests (and annoying for many of you) sorry for this but I can't find an official tutorial in "how to choose settings".

Briefly, I have to setup a PVE with a single VM running a pbx based on CentOS7 over a XEON E-2314 4CORE bare metal platform.
What's the appropriate settings ?

1 socket , 4 cores , CPU type: host , just to pass the real host resources to VM ??

Default CPU type is x86-64-v2-AES is it ok for this ?

Please, share an official (if one) or at least reliable documentation/tutorial about what when and why of these settings

That you cannot find a straight answer is probably already a clue that "it depends".

It does not make sense to give each VM the same resources that the host has or the same resources at all. It just depends on what you want to do with your VMs.
